Coloring Easter eggs, hiding them for kids to be found and adding them to Easter dinner feast is also fun and an occasion to gather a family together over a meal and to keep the traditions alive.
Let me share something new with you this Easter. My moms egg recipe, just in case you might want to mix tradition with something new and unusual and surprise your guests. I know it is last minute but the recipe is not log to execute i promise. So here it is.
Eggs on Red Peppers
You will need
6 eggs | |
2 red sweet peppers | |
2 tablespoons of mayonnaise | |
½ teaspoon English mustard powder | |
1 tablespoon French mustard | |
2 spring onions | |
Tablespoon of capers | |
Paprika | |
Salt and pepper to taste |
Boil the eggs for 12 minutes. Remove the egg shells and allow to cool. Halve the eggs lengthwise and remove the yolks.
Spoon the mixture back into the egg whites. Sprinkle lightly with paprika and garnish with capers.
Halve the red peppers, remove all the white pith and seeds. Slice the red peppers into thin strips cutting off any curved ends so the strips are nearly flat.
Arrange the strips of red pepper on a plate and place the eggs on top.
You are almost done. My little niece painted the image of our Snap Arbre decal with Easter eggs. Yours can do the same but instead of painting your wall use Easter egg stickers to create Easter ambiance.
